on my 59 pan with linkert carb I have 2 different gaskets , one is real thick , the other is normal gasket thickness .This is the gasket that goes between the carb and manifold. Does it matter which one I use ? How come theres 2 different ones?

Robbie is absolutely correct,
But we could spend a semester of research to determine what "normal" was.
Graciously, nearly any gaskets will do upon manifold and carb flanges that have been ground to 'flat', as long as any used phenolic spacer is dressed as well.
(Sensible fastener torque is assumed, naturally. I have pics of two related victims that must have suffered an air impact.)
All of those dimensional changes should be negligeable,
but if the carb support does not want the assembly to mate without the slightest tweak or bind, massage the carburetor support without mercy until it does.

The insulator I have is about 1/4 inch thick, although I don't know if it's oem.....
