what's the best course of action for heads that have had the seats cut out and new hardened seats pressed in ?

If they were properly installed without damage to the head, (and you are running a reasonable compression ratio),
then you need only to avoid any heat spikes: manifold leaks, over-advanced timing, low octane fuels, lugging under excessive load, etc.
Good Luck!

Luck has little to do it. Experience and knowledge is where it's at. Deal with reputable craftsmen. This is not an area where cost should be the primary consideration....bosheff

Re: panhead vave seats
Stump and All!
Even if you were so lucky as to have found a knowledgeable craftsman to install hardened seats properly (a loaded word), the spectre of heat spikes shall still hang over the heads forever.
They will never be as forgiving as the original heads that earned their legendary reputation for longevity, inspite of abuse.
(Nor even those with MOCO bronze insert replacements!)
So you must remain vigilant against any possible cause of excessive heat, even long after the machine has been 'broken in'.
Something as simple as points cam-follower wear can be disastrous.
